My kids have Eczema and therefore I focus on an organic diet. This appears to have improved their skin and my cooking skills. It has also changed my families taste, we now eat a wider variety of veg and more interesting home made food.
I have experimented with many meatball recipies with little success. This one was given to me by a Christian home educating family we met, out of the blue, on a lovley camp site in St Davids, South Wales.

1 pound of organic beef mince.
1 pound of organic gluten free sausage meat
1 fine chopped organic onion or leak
1 beaten organic egg
some organic flour
Organic tomato puree
2 packs of Organic Soup, for instance tomato and vegtable. )
A little organic sea salt
large tin
foil or lid.
1) Mix onion, meat, egg, salt and tomato in a large bowl.
2) Flour hands and shape into meatballs the size of a golf ball.
3) Place in large tin and pour over 2 packs of organic soup.
4) Cover and cook of about 45 mins on Gas number 5 or 6
6) Serve with a fresh organic salad and some organic pasta with a little organic cheese grated ontop.
Very filling, I usually serve 3 for the kids and me and 4 for my hubby. The rest is then frozen for another day.
It is a perfect recipie for the kids to help with, they just love making the little meat balls and getting their hands (and everything else) covered in flour.
